Tired of the same old toastie combinations? We all appreciate a classic ham and cheese toastie (yes, even us vegans, thanks to our house-made vegan ham), but it’s always fun to switch things up. Let’s take your taste buds on a journey with these mouthwatering toastie ideas.
MUSHROOM HEAVEN
Serves 2
Ingredients:
– 2 Turkish rolls or half a Turkish loaf
– 2 large portobello mushrooms, thickly sliced
– 1 tbsp plant-based “butter” (plus extra to butter the rolls)
– 60g Gruyere cheese (grated or sliced)
– 60g Parmesan cheese, grated
– 100g baby spinach
– 2 tbsp LTE balsamic onion jam
– Salt and pepper to taste
Instructions:
- In a pan, fry the mushroom slices on medium-high heat in “butter” until they turn golden on both sides (turning once only if possible).
- Add salt and pepper to taste during the final stages of cooking.
- Slice the bread rolls through the center and spread with butter.
- Place the rolls open on a baking tray.
- Top with mushroom slices, dollops of onion jam, and both cheeses.
- Toast in a preheated fan-forced oven at 180°C for 10 minutes or until the cheese is melted.
- Finish with fresh baby spinach, close the roll, and enjoy!
MEXICAN MADNESS
Serves 1
Ingredients:
– 1 Turkish roll or half a Turkish loaf
– 2 x 125g tinned four-bean mix
– 2 tsp Mexican seasoning
– 1/4 avocado, sliced
– 60g Tasty cheese, grated
– 1/4 red capsicum, finely diced
– 1/4 cup corn kernels
– 2 tsp lime juice
– Tabasco to taste
– Salt and pepper to taste
Instructions:
- Drain the four-bean mix.
- Mix the four-bean mix with Mexican seasoning.
- Combine capsicum, corn, lime juice, Tabasco, and salt to taste.
- Slice the bread roll through the center and butter the exterior.
- Spread the avocado on the base of the roll.
- Layer seasoned four-bean mix, salad, and top with cheese.
- Season to taste.
- Close the roll and toast it under the grill, in a pan, or using a sandwich press until it’s golden and the cheese is melted.
ROAST ‘N ROLL
Serves 1
Ingredients:
– 1 Turkish roll or half a Turkish loaf
– 1 tbsp plant-based “butter” (plus extra for the roll)
– 1 tbsp pesto
– 200g roast vegetables (leftovers from dinner or prepared as follows):
– 1/4 eggplant, cubed
– 1/4 capsicum, cubed
– 1/4 onion, cubed
– 1 clove garlic, cut in half
– 50g cubed pumpkin
– Vegetable oil and salt to taste for roasting
– Salt and pepper to taste
– Optional: crumbled Persian feta cheese
Instructions:
- Slice the bread roll through the center and spread with butter.
- Spread pesto on the base of the roll.
- Layer on the roast vegetables and, if desired, crumble on cheese.
- Season to taste.
- Close the roll and toast under the grill, in a pan, or using a sandwich press until it’s golden and the cheese is melted
ALTERNATIVES
Skip the Pesto and replace with 2 tbs Hummus and 1 tbs Chilli Jam both from Let Them Eat of course!
BBQ “CHICKEN” OR *ACTUALLY* VEGAN TURKEY
Serves 1
Ingredients:
– 1 Turkish roll or half a Turkish loaf
– 1 tbsp plant-based “butter” (plus extra for the roll)
– 1 tbsp BBQ sauce
– 100g LTE “turkey” roll
– 1/4 sliced red onion
– 1/4 cup corn kernels
– 1/4 cup grated Tasty cheese
– Salt and pepper to taste
– Optional: crumbled Persian feta cheese
Instructions:
- Slice the bread roll through the center and spread with butter.
- Spread BBQ sauce on the base of the roll.
- Layer on the “turkey,” corn, onion, and Tasty cheese.
- Season to taste.
- Close the roll and toast it under the grill, in a pan, or using a sandwich press until it’s golden and the cheese is melted.
TWEAKING IT
While Turkish bread is our top choice for toasties, some thick-sliced sourdough or a couple of wholemeal wraps make great alternatives for your gourmet creations.
