Let Them Eat was founded in 2008 by Dani Frankish & Tanya Agius – over 16 years ago! So, when they say they have eaten our full range of food many times over and in every which way, we believe them!
To put a little ‘spark’ back into their favourites, they have some secret (and simple!) recipes up their sleeve that they are going to share with us over the coming months. Discover ways you can reimagine our food with some easy to make yet delicious combinations that you can try for yourself at home! You will be surprised at how versatile our food really is!
Let’s kick it off with a dish we think is excellent for weekend breakfast that adds a kick of spice to the morning, packs a whole lot of flavour plus is super simple to make at home!
BREAKFAST KIMCHI PANCAKE
This is Dani’s favourite homemade breakfast, using our Kimchi & Sweet Potato Fritter* served with a fried egg and a little addition of fresh Kimchi on top.
PREP TIME: 5 mins
COOK TIME: 15 mins plus assembly
INGREDIENTS: 2 x Let Them Eat Kimchi & Sweet Potato Fritters, 2 x Eggs, 4 x tbsp Kimchi, 1 x tbsp Canola Oil (if frying)
Step One: Turn fry pan to medium hot and heat 1tbsp of canola oil (alternatively, you can use a sandwich press)
Step Two: Place Kimchi & Sweet Potato Fritter directly onto hot pan and, using flat spatula, press hard to flatten to approximately 1cm
Step Three: Allow first side to cook until crispy (approximately 8 minutes). Flip fritter and repeat on other side until crispy.
Step Four: While fritter is cooking, crack good quality eggs onto same pan and cook to your liking.
Step Five: When ready, take Kimchi “pancakes” off pan and straight to plate. Place eggs on top of pancake and, for those wanting more of a kick, add fresh Kimchi.
“I absolutely love this dish for a Sunday morning breakfast … the key is to get that fritter nice and flat with ultimate crisp. I know Tanya loves a fried egg on top but I personally love just a good healthy dose of fresh Kimchi … homemade does the job for me!” – Dani, Co-Founder & Executive Manager
“If I’m not using our own Let Them Eat Kimchi, we have a friend who makes an excellent homemade version from her place in the Adelaide Hills (hers includes the traditionally used shrimp paste). Otherwise, for an authentic Kimchi, you can always visit your local Korean grocer or market.” – Tanya, Co-Founder & Head Chef
*Let Them Eat Kimchi Fritter is Vegan (does not include fish sauce or saeujeot (fermented salted shrimp))
What is Kimchi?
Kimchi is salted fermented cabbage, in the Korean style of hot and spicy and although the recipe can vary greatly it generally relies on garlic, ginger and chilli as the base. It can sound a little off-putting for some but it really is delicious and when included in the Kimchi & Sweet Potato Fritter creates a hot, sweet and sour flavour.
